Hot Gammon in more ways than one…

Dan the cook likes his Gammon hot… and not just straight out of the oven.

 

First Dan boils his Gammon with onion, leek, bay leaf and peppercorns. He then coats the meat in a combo of cherries, honey, Kashmir chilli powder, thyme, cherry jam and black pepper, before roasting in the oven.

 

As you can see from the photos, Dan’s Gammon is spectacular, to be enjoyed both hot and cold.

 

There are so many inventive ways to cook Gammon. Some people prefer to simply boil the joint while others like to boil for half the time before roasting. And there are endless glazes, rubs, and stocks, allowing you to cook up your own creation.
