Cut from the fore quarter, this is a largely forgotten cut of beef that can now be seen on many restaurant menus.  Ideally suited for long, slow cooking, when cooked the gelatinous strip renders down adding depth to the flavour.  Cooking can be further enhanced by adding red wine or a bottle of your favourite ale.
